Chef Dancin’ Eric Hanson prepared a smoky breakfast featuring eggs, mimosa, and fruit.
The eggs were made with spinach, onions, and mozzarella cheese. They only took about 15 minutes in the smoker
They were perfectly baked through. Lightly smoky and full of great flavor. Eggs can be smoked!
Eric smoked a bunch of fruit: grapefruit, nectarines, pineapple, and watermelon.
The smoked grapefruit made a lovely mimosa! The sprig of thyme added some depth of flavor. It’s a win for sure!
Last up, the fruit cup. Nectarines and pineapple can be smoked. It alters the flavor of the fruit, but mostly made us all long for some smoked meat to be served with that smoky fruit.
DO NOT SMOKE WATERMELON. It looks gross. It smells gross. And it changes the texture of the melon.
